Paleo Cooking Class 101-April 19th

Spring has sprung, the grass has ris, I wonder where the…mammoths is?  The Paleo/Primal/Ancestral Health lifestyle has been gaining momentum and popularity since its modern reintroduction, and for bountiful reasons!  Join us to explore just what this movement’s all about, and why those who have drank the honey-sweetened “Paleo Kool-Aid” are coming back for more!

In this demo-cooking class, long-time herbalist and budding Paleo-nutritionist Amy Bousman-Johnson will dispel the many myths surrounding the Paleo diet, how to start and complete a pantry purge, share personal health triumphs (such as putting two autoimmune diseases into remission and losing 35 pounds of inflammation weight within the first four months on the diet!) as well as give useful tips for getting started on this health-altering lifestyle.

We will prepare, cook and joyfully devour a nutrient-dense, Paleo-inspired meal together, utilizing locally-grown, organic goods.  Class will end with time for questions and an opportunity to peruse Amy’s favorite Paleo cookbooks.  Class includes a take-home packet of info including Amy’s favorite Paleo blogs, websites, and a delicious, week-long meal plan to help get you started at home!

Soaking & Sprouting of Gluten-Free Grains 101-April 26th

Join us to discover the crucial importance of soaking and sprouting gluten-free grains!  Tap into the wisdom of the ancients and TASTE the wholesome difference.  We will discuss and demo how to properly soak and sprout quinoa, oats, cornmeal, legumes, nuts (not a grain, but hey! It's still important :) and more.  We will taste-test properly soaked gluten-free oats (with honey, raw goat milk, cinnamon and pasture butter, if you please ;) and an Asian-inspired sprouted mung bean salad.  Participants will leave with a handout including Amy's favorite soaked/sprouted recipes and raw whey from her pasture-raised goats to get your sprouts going at home!

The Basics of Goat Cheese Making – May 30

FETA, MOZZARELLA & CHEVRE

Join community herbalist & cheese-maker, Amy Bousman-Johnson, and learn to make delicious artisinal cheeses in the comfort of your very own kitchen!  The process is surprisingly simple with only a few inexpensive supplies needed to carry on this essential homesteading tradition.

Students will experience the step-by-step process for making three fantastic fresh cheeses (feta, chevre, & mozzarella) using raw goat’s milk from Amy’s very own does!!  Print resources and recipes will be included. Mingling will follow with a delightful cheese & wine tasting!

FYI – Raw milk (although superior) is not required for these methods of cheese making.  Pasturized milk can be used instead.
